Carrot Cupcakes

A colleague once made these cupcakes, and I just couldn’t stop EATING! I had to get the recipe and make them for myself. Sooo damn juicy and delicious! Everybody should make them. Now. Go, make them now! You won’t regret it, I promise :D

Muffins:

  • 40ml buttermilk

  • 170ml vegetable oil

  • 225g sugar

  • 1 vanilla bean

  • 6-9 carrots (depending on size)

  • 90g ground hazelnuts

  • 180g wheat flour

  • 2 eggs

  • ½ tsp salt

  • ½ tsp cinnamon

  • ½ tsp ground ginger

  • 1 pinch of ground cloves

  • ½ tsp baking soda

  • 1 tsp baking powder

165°C / 25min

Frosting:

  • 25g butter

  • 50g cream cheese

  • 250g icing sugar
